Favorite Cookie Jar Cookie

Currently we have a new favorite cookie jar cookie - and well, we like them so much that I don't have a picture for you. We've eaten them all up! This one is my own creation - though a very standard chocolate chip recipe. I love this because it is crispy enough to hold it's shape in the jar but doesn't get hard in the jar..

Cookie Jar Cookies

1/2 cup butter, softened
1/2 cup shortening
1 cup packed brown sugar
1/2 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
1-1/2 teaspoon ground cinnamon
2 eggs
1 teaspoon vanilla
2 1/2 cups unbleached all-purpose flour
1 package of mini chocolate chips

Preheat oven to 375. Beat butter and shortening for 30 seconds. Add brown sugar, granulated sugar, baking soda, salt and ground cinnamon. Beat until combined. Beat in eggs and vanilla. When fully combined stir in the flour and mini chocolate chips.

Drop dough by rounded tablespoon on to ungreased cookie sheet. Bake for 8 - 10 minutes or until light brown. Cool on wire racks.
