Baked Oatmeal


Baked Oatmeal is one of our favorite breakfast treats. I bake a pan on the weekend and store leftovers in individual serving containers (see left). The leftovers make for a quick weekday meal. This version of the recipe comes from Taste of Home Spring 2009.

3 cups quick oats
1 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
2 eggs beaten
1 cup milk
1/2 cup butter, melted
3/4 cup chopped apple
1/3 cup frozen peaches
1/3 cup frozen blueberries

In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. Combine eggs, milk and butter; add to the dry ingredients. Stir in fruit.

Pour into an 8 in square baking dish coated with cooking spray. Bake, uncovered at 350 for 35-40 minutes or until a knife comes out clean. Spoon out and serve by pouring milk over.

Another favorite - 3 parts water to 1 part grout oats in a crockpot. Add frozen fruit, and cinnamon. Cook on low all night. Serve with milk and butter/sugar to taste.
