Oh how I love older cookbooks. This recipe comes from Anita Prichard's Complete Candy Cookbook copyright 1978. I love the Quick and Easy recipe section... because let's face it... If I'm making anything these days it must be quick & easy. So here's the 5 minute fudge.
1 2/3 c sugar
2/3 c evaporated milk
6 oz semi-sweet chocolate chips
1 1/2 c miniture marshmallows
1/2 c nuts, chopped
1/2 c candied cherries, optional
Combine sugar and milk in saucepan and cook over medium heat, stirring constantly with wooden spoon. Bring to a boil and stir continuously for 5 more minutes. Remove from heat and mix in chips & marshmallows. Melt them in. Add nuts and cherries if desired. Pour into an 8x8x2 pan lined with buttered foil. Cool until firm and cut into 1" pieces.
