3 envelopes unflavored gelatin
1-1/4 cups water, divided
1-1/2 cups sugar
1/2 t extract (I used mint)
Additional sugar for coating
In a small bowl, sprinkle gelatin over 1/2 cup water and let stand for 5 minutes.
In a pan, bring sugar and remaining water to a boil over medium heat, stirring constantly. Add gelatin and reduce heat. Simmer and stir for 5 minutes. Remove from heat and add extract and 6 - 8 drops food coloring.
Pour into greased 9 x 12 pan and chill for at least 3 hours. Loosen edges and flip from pan. Cut into shapes and roll in sugar. Let stand at room temperature for 3 -4 hours, rolling occassionally to allow to dry on all sides. Store in the refrigerator.
