Pork & Hominy Stew

This was so good I had to share the recipe. It comes from an old issue of WW Magazine. I did deviate a little from the original recipe so the original (old) points calculation of 5 per 3/4 cup serving isn't correct. But it's a good ballpark indicator of a healthy main dish option :o)
1 1/2 lbs boneless pork shoulder, trimmed and cut into 1 1/2 inch chunks
1/2 t salt
Non-stick spray
2 (14 1/2 oz) cans low sodium chicken broth
2 (14 1/2 oz) cans diced tomatoes (I used the onion & garlic variety)
1 large onion, chopped
3 garlic cloves, minced
2 t oregano
1 1/2 t ground cumin
1 1/2 t ground coriander
1 (29 oz) can hominy, rinsed and drained

Sprinkle pork w/ salt and brown in large skillet - about 5 minutes. Add pork and remaining ingredients to slow cooker. 4-5 hours on high or 8-10 on low. Pork should be fork tender when completely cooked. Everyone ate it all without any complaints :o) Winner!
