Weight Watchers has out a new cookbook that is fully updated with the new points plus program. It's awesome because it only uses 5 ingredients in each recipe. For me this simplifies some of the planning and helps to keep the grocery tab within reason. All of the recipes are healthful and those I've tried have been delicious. And just an FYI you can purchase cookbooks at any Weight Watchers Center or travel location. You need not be a member to purchase, though if you are attempting to lose weight it's important to remember that the program strength is the mutual support... but enough of that... check this out!
I made the Braised Chicken Thighs with Tomatoes and Green Olives on page 74. All of us gave it a huge thumbs up. It's speed also earned it a place on the weeknight dinner list for the future. I wish my pictures turned out as well as their food stylist ones... but eh.. this is real life right?
5 ingredients: 4 skinless, boneless chicken thighs, 2/3 c chicken broth, 3 chopped plum tomatoes, 1 thinly sliced onion, 1/2 c halved and pitted green olives.
And what could be better than only 5 ingredients? ~ Only 2 steps!!!
1. Brown chicken thighs in large skillet sprayed with nonstick over medium high heat, about 3 minutes per side.
2. Add remaining ingredients; bring to a boil. Reduce heat and simmer, uncovered, until chicken is cooked through about 6 minutes.
